Your day to day

Each experience enriched by an otherworldly setting of tropical rainforests or the crystal waters of the Coral Sea, from the all-new beach front Pool Club to the reimagined dining icon, Pacific. To support our Director of Kitchens in bringing it all to life, we require strong kitchen leaders with the ability to inspire our colleagues, and who have the genuine care to train and develop a high performing team. An Executive Pastry Chef who will lead their team and assist in managing the daily kitchen operations of our diverse Food & Beverage Operation, with a focus on the Pastry Kitchen. Great restaurant memories come from many places. The sights, sounds, scents and, importantly, the food. Working within the reimagined restaurants, bars and event offerings on the island, your passion for presentation and dedication to delivering flavour will complete each guest’s experience. Working alongside our broader culinary team and leading our Pastry team you’ll create some of our guests’ favourite culinary moments. The perfect complement to the unique personalised service provided by our world class front of house team. This role encompasses all the normal things you would expect from such a role; an opportunity to focus on the pastries and let your ingredient knowledge, creativity and culinary skills shine whilst leading and developing your team. From high teas and desserts to sweet treats and savouries, you’ll be at the forefront of the Pastry team and the delivery of delights across the resorts venues, corporate functions and special events.

What we need from you

So if you’re charismatic, approachable, and passionate about exceeding guest’s culinary expectations and playing a key role within the Kitchen Brigade - this is your opportunity to work in this unique environment and fast track your career. Our passionate foodies and experienced leaders must have:• A formal Commercial Cookery Certification• A minimum of 2 years experience as a Pastry Chef or Chef de Cuisine, Pastry or be a talented Sous Chef, Pastry ready for their next challenge.• Demonstrated performance in a hotel or resort environment, preferably in a complex property with multiple restaurants, bars and banqueting department• Strong skill base and experience in providing offerings from the Pastry Kitchen to compliment a la carte, banqueting and buffet food production• Hands On style, who understands and can deliver on the expectations of a modern and contemporary guest experience• Possess great attention to detail• Demonstrated performance leading a successful team• Excellent time management skills• Superior communication skills• A working knowledge and understanding of HACCP procedures, including the training of colleagues in procedures• Rostering, ordering & payroll knowledge will be highly regarded You will be a change agent with the ability to work alongside a team and collaborate with key stakeholders with a sense of urgency. Strategic thinking, the ability to explore new ways of working and an open mind around how we can drive the Resort forward and deliver unrivalled guest journeys will be highly advantageous. You must also hold the appropriate work rights to work within Australia alongside an open Australian driver’s license and be flexible to work weekends and evenings as required; commencing from early to mid August 2020.
